These golden discs are anzac biscuits. I discovered them in Australia.⁠⁠

They taste like a crunchy oats, browned butter, and toasted coconut. I tried skipping the golden syrup and using maple syrup and honey instead. They tasted like a nature valley bar, they were so vile. Don’t skip the golden syrup if you want that real anzac biscuit flavor. Good luck

Ingredients

  • 1 cup ap flour⁠⁠
  • 1.5 cup rolled oats⁠⁠
  • 1/2 cup unsweetened shredded coconut⁠⁠ (don’t use the coconut flakes i did if you can help it, they’re a bit too big.)
  • 1/2 cup brown sugar⁠⁠
  • 1 tsp baking soda⁠⁠
  • 1 stick salted butter (if using unsalted, add 1/4 tsp salt)⁠⁠
  • 2 tbs water
  • 1/4 cup golden syrup (a must)⁠⁠

Instructions

  1. Preheat oven to 350F⁠⁠
  2. Whisk together flour, oats, coconut, brown sugar, and baking soda in a large bowl⁠⁠
  3. Melt butter and golden syrup together in a small saucepan⁠⁠. Add water
  4. Pour butter mixture over dry ingredients , it’s okay if the butter mixture is warm. The dough will be sticky. Forming balls with wet hands will help.
  5. Form into ~9 flattened balls and bake for 12-14 minutes until deep golden brown. (longer for crispy cookie)⁠⁠

⁠⁠*** full disclosure i kind of burnt these and experimented with whole wheat flour (not good), which is why they’re so dark. Yours will be golden and better
