Jarred roasted red peppers from Trader Joe’s are a wonder here. You’ll roast the shallots in the oven before pouring in the egg mixture, so you do not need to turn on the stove. If goat cheese isn’t your favorite, feel free to swap it out with 1/2-2/3 cup of any cheese you like.
I hope you make this for lunch or dinner and not just for breakfast. That way you might actually try it during the week because I don’t think anyone sane is making frittatas before work.

Be sure to drain the jarred red bell peppers well, to prevent a soggy frittata
Do not overcook this, or it will become dry and rubbery. The middle can jiggle very slightly, it will continue cooking when you take it out of the oven.
1 tbs oil (1.5 tbs for muffin tin, divided into 1/2 tsp portions) 1 large shallot or a small onion 8 eggs 1/3 cup milk or half and half 1 (4 oz) container crumbled goat cheese or 1 (5oz) log 1 (12oz) jar roasted red pepper, drained and diced 3/4 tsp table salt or 1.5 tsp kosher salt A few grinds of pepper
To Serve: Baby spinach, arugula, or mesclun greens Crusty Bread.
Step-by-step Instructions
Cast Iron Directions: *8-inch square pan, or 9-inch cake pan also work
1. Preheat oven to 400F and arrange a rack in the middle 2. Peel and thinly slice shallot 3. Pour 1 tbs oil into skillet, spread shallots in an even layer, and roast for 7-10 minutes until shallots are soft and browned. Remove from oven; don’t turn off oven. 4. Meanwhile, drain and dice roasted red bell pepper. 5. In a large bowl, beat eggs, milk, salt, and pepper. Stir in crumbled goat cheese and diced red bell pepper 6. Pour egg mixture into cast iron skillet over roasted shallots. 7. Bake for 15-20 minutes, until the eggs are just set. Check by poking a knife into the middle, it should come out with no raw egg residue.
Muffin Tin Directions: *makes 9 frittata muffins
on Step 3, pour 1/2 tsp oil into 9 muffin tins. Evenly divide shallots among 9 oiled muffin cavities, and roast. Pour egg mixture into muffin pan, and bake for 10-12 minutes until set
