Strawberry Banana Pancakes Recipe Success Guide:
Do not overmix the batter. It should be thick, and lumpy. I like to use a fork instead of a whisk since whisks tend to overmix.
If you don’t have any bananas, you can make simple strawberry pancakes. Replace the cup of banana puree with 3/4 cup of milk.
1 cup of sliced strawberries + more for serving 1.5 cups (195g) all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 2 tbs sugar 1/2 tsp table salt 1/2 cup (120ml) milk + 2 tsp white, red wine, apple cider vinegar, or lemon juice 3 large very ripe bananas* 1 tsp vanilla extract 2 eggs 1 tbs (14g) melted butter. Oil works in a pinch.
*If your bananas are small, use 3 instead of 2, or add more milk. You should have 1 cup of banana puree. Two of the bananas are for the pancake batter, the third is for sautéing and serving. This third banana can be yellow, not overripe.
Step-by-step Instructions
Cut stem off strawberries, and slice. For heart-shaped strawberries, slice them vertically.
In a medium bowl, whisk together flour, baking powder, baking soda, sugar, and salt until combined and flour is lump-free
In a large bowl, mash two bananas until they’re pudding consistency. Add milk, vinegar, vanilla extract, eggs, and melted butter. Whisk to combine.
Pour dry ingredients into wet ingredients. Using a single whisk attachment or a fork, stir until spots of dry flour just disappear. The batter will and should be lumpy. Do not beat out the lumps, or your pancakes will not be fluffy.
Preheat a skillet over medium-high heat. Spray with non-stick spray and scoop heaping 1/4 cups of batter onto hot pan. Press sliced strawberries into batter. Spray the top with more non-stick spray.
Cook for 1-2 minutes until bubbles appear on the surface. Flip and cook for another 1-2 minutes. They will sizzle on the second side as the berries will caramelize.
Flip onto a plate and tent with foil to keep them warm while you finish the rest
